I really enjoyed this meal. The basa filet -- flaky. The green beans -- crispy. The mushrooms -- buttery. This is a meal that I would gladly cook and eat for a week!
I've posted a recipe for stir-fried green beans with ground beef some time ago. It's a great recipe but it requires the use of cooking wine and soy sauce and since Ed and I are on a 30-day paleo challenge, I couldn't use that recipe to cook these fresh green beans I got from the market.
This new green bean recipe, modified to fit the paleo guidelines, was equally as delicious. I used coconut aminos rather than soy sauce and omitted the michu (cooking wine). My only complaint is that I did not use enough shiitake mushrooms. I can't get enough of these little fungi with chock full of antioxidants! When I cooked the green beans this time, I used 3 ounces of shiitake but next time, I will surely double the amount!
Basa Filet with Stir-Fried Green Beans and Shiitake Mushrooms
Ingredients for Broiled Basa Filet:
1 pound basa filet (2 filets)
1 tablespoon coconut oil
salt and pepper
1 lemon
Ingredients for Stir-Fried Green Beans and Shiitake Mushrooms:
12 ounces green beans, trimmed and washed
6 ounces shiitake mushrooms
1 tablespoon coconut oil
1 small shallot, sliced
1 tablespoon coconut aminos
1/4 cup water
3 cloves garlic, grated
Turn on broiler. Put the the basa filets on a broiler safe pan. Distribute 1 tablespoon of coconut oil even amongst the filets. Season the filets with salt and pepper. Broil the filet for 5-7 minutes, depending on how well done you would like it to be.
Meanwhile, separate the stems of the mushrooms from the top. Slice the stems and the tops but keep them in two separate piles. (Stems are tougher so they need to be cooked longer).
Over medium heat, on a stainless steel pan that has a cover, heat 1 tablespoon of coconut oil. When oil is hot, add shallots and mushroom stems. Stir for 1 minute. Add green beans and stir for 30 seconds. Add coconut aminos and water. Turn the heat down to low and cover the pan for 2 minutes.
Turn the heat to medium high. Add garlic and shiitake mushrooms. Stir for 1 minute.
To plate, place green beans and mushrooms on the side of the plate. Place basa filet over the green beans. Add lemon zest on the filet. Serve with a lemon wedge. Enjoy!
