If you've made my mango sesame dressing, then you may have some leftover. If you do, you can use the dressing for a salad -- just thin it out with some water and toss with your favorite veggies. You can also make more crispy chicken thighs and use the dressing again as a dip. Or, you can use the dressing to help prepare some salmon -- yep, that's what I did and it was delicious!
Salmon is probably one of my favorite fish to eat -- especially if it's wild salmon. I feel it has so much flavor on it's own that it really only needs some salt and pepper and a hot broiler. But this time I opted for something different. I had some mango sesame dressing leftover from the crispy chicken meal so I used that as a marinade for the salmon, grilled up some romaine lettuce while the salmon was under the broiler, and viola, dinner is served.
I think I've just found a nice new way to make this lovely fish...

BROILED SALMON WITH MANGO SESAME DRESSING
Ingredients:
1-1/2 pound salmon, cut into 4 pieces
4 tablespoons mango sesame dressing
salt and pepper
Preheat broiler.
Season salmon with salt and pepper. Spread one tablespoon of mango sesame dressing onto all sides of each piece of salmon.
Broil salmon for 7-8 minutes.
Serve salmon with some grilled vegetables -- I used hearts of romaine.
