I have fond memories of going to a local park and hunting for eggs during easter. My mom and aunt would stand behind a barrier (parents were not allowed in the "war zone") cheering my cousins and I on. They would shout and point at the hidden eggs that were right beneath us but we were too scattered brain to see. When the whistle was blown and the search was over, I would proudly hop across the rope barrier and show my mom my basket of goodies. The simple life of being a kid -- I miss those days.
Easter is coming up in less than two weeks. For those who are going to someone else's house for easter, like myself, we would need to bring something that travels well. I suggest chocolate covered strawberries. The vibrant color of the strawberries make a beautiful dish on their own but dip it in dark chocolate and you have a guilt-free dessert. Didn't you hear that chocolate is good for you? Let's hope you did not give up chocolate for lent!
To melt chocolate, using the double broiler method is the best. Microwaving the chocolate works too but it is very easy to over-nuke the chocolate in the microwave causing the chocolate to look crumbled more than melty.
To set up a double broiler, simply grab a pot and a stainless steel bowl. Put two cups of water in the pot and heat the water but do not boil. When you see little bubbles in the water like the picture on the top right, it means the water is ready and you can turn off the heat. Place the stainless steel bowl on top of the pot and stir the chocolate till melted.

Chocolate Covered Strawberries
Ingredients:
1 pound of fresh strawberries, washed and dried
1 bar (4 ounces) chocolate, chopped
Place chocolate in a glass or stainless steel bowl over a pot of hot, but not boiling, water (use double broiler method). Stir the chocolate until melted. Dip the strawberries in the chocolate and place it on parchment paper. Wait 15 minutes to allow the chocolate covered strawberries to air dry before placing them in the fridge.
