It's been seven days since since Eddie went on a strict Paleo diet. He has lost 6.8 pounds! He actually woke up chanting "177.2". (When he started Paleo last Saturday he weighed 184 pounds). He said he feels great, has more energy and doesn't crave grains or pasta, although he misses having a piece of chocolate now and then. Then he found out, through one of our Paleo books, that eating dark chocolate (85% cacao or more) was okay and even healthy. So there he went, heading to the supermarket and coming back with a dark chocolate bar. It was surprisingly good...
I, on the other hand, craved more than just chocolate. I craved sushi. I miss my salmon and tuna rolls. Makes me hungry just thinking about sushi... but rice filled rolls are not part of a Paleo diet so I thought maybe I could try making rolls without the rice. The result was not filling enough to be a meal but it was a perfect bite-sized snack.
Just a tiny FYI, I tried making this roll using mashed avocado to substitute as rice but it made the nori sheet soggy. I tried to avoid the extra labor of julienning carrots and used 1/4 inch wide carrots instead but found that the roll was hard to chew. To close up the seam of the roll, I used a little bit of green tea and brush it on seam with my finger in order to seal the roll.
Tropical Smoked Salmon Roll
Ingredients:
6 nori (seaweed) sheets
2 ounces baby spinach
6 ounces wild smoked salmon
1/2 mango, sliced 1/4 inch wide
2 small carrots, julienned
1 avocado, sliced
a cup of green tea or water
Place nori sheet on a bamboo rolling mat and layer baby spinach, 1 ounce of smoked salmon, pieces of mango, pieces of carrots and 2 or 3 slices of avocado on top.
Roll the sheet as you would a sushi roll. Brush the seam with some green tea or water. Set aside and wait 3 minutes before you cut the roll.
